La Gavina is the stuff of legend, and the Ensesa family siblings Julia, Virgina, Carina and Josep are rightfully proud gatekeepers of a property they not only remember so affectionately from childhood but yearn for it to flourish in the future. Back in 2016, the family secured the services of Michelin-starred chef Romain Fornell who was appointed the gastronomic director of the fine dining Costa Brava hotel. While his name still hangs above the door, Fornell has taken a back seat with Executive Chef José Pulido taking responsibility for the entire food and beverage operation. He works in close collaboration with the Ensesa family to develop and evolve menus at each of the La Gavina restaurants. The promising haute cuisine chef, Oriol Fernández, who has worked with prominent names including Alain Ducasse, oversees daily service at Candlelight.
